I've downloaded a recipe for that Norweigan delicacy lefsa--a kind of Scandinavian crepe, only more starch (potato or flour) based. Christmas shall be spent attempting to produce a reasonable facsimile. I'll keep you posted.

I grew up with lefsa - my grandfather was Norwegian, my great-grandmother handed down the family recipe. She used to cook it right on the wood stove top. We use a special griddle these days, or a flipped cast iron skillet works. It became a holiday tradition to make it - flour everywhere, wheels being rolled, spurtles, cooling racks, flour everywhere....
